Upon arrival. the fish is flash-frozen to eliminate any potential impurities. preserving its integrity. We then carefully cure. air-dry. and smoke it using time-honored techniques that unlock its deep. savory character.
The result? A richly flavored delicacy with a texture reminiscent of gourmet jerky. The center and lower portions offer a tender. chewy bite. while the top section—naturally thicker—has a firmer peel that enhances the artisanal feel of each piece. This special fillet has extra maple glaze on it for a sweeter taste!
